Congratulations to OHS Culinary Arts Student Rachel Kowalski!
February 25, 2013Congratulations to Orange High School senior Rachel Kowalski and her teammates from the Excel TECC Culinary Arts II class on placing third out of 24 teams at the state level ProStart Invitational on Monday, February 18, 2013. They had been practicing after school for months and did a phenominal job representing
the Excel TECC Culinary Arts program.
Names of dishes:
- Appetizer: Creamy Mushroom Ragout with Crispy Herbed Polenta
- Entree: Salmon with Lemon Butter over Saute' of Cavatelli, Butternut Squash, Kale, Asparagus & Pancetta
- Dessert: Apple Flower served with Oatmeal Walnut Tuile, Mascarpone Whipped Cream & Caramel Sauce
Excel TECC is a career technical consortium serving the nine school districts of Aurora, Beachwood, Chagrin Falls, Mayfield, Orange, Richmond Heights, Solon, South
Euclid Lyndhurst, and West Geauga offering 22 unique programs. Excel TECC’s primary objective is to prepare students to enter a four year college, a two year technical school or the career of their choosing. Students in Excel TECC programs are eligible to receive college credit upon successful completion of their program according to tech prep standards and may receive anywhere from three to twenty five college credits.
According to the Excel TECC web site, the Culinary Arts II ProStart curriculum
provides each student earning a certificate of achievement with articulated college credit. ProStart teaches culinary mathematics, restaurant business management and marketing techniques. Topics such as: employability skills, menu planning & design, cost extension/markup, restaurant design and equipment analysis are addressed. The Culinary Arts II curriculum explores many careers in the food industry (not just careers in restaurants!).
